Creamy Italian Dressing!

I made this homemade salad dressing for Catherine's birthday dinner & everyone loved it. It kinda tastes like the dressing from olive garden.


Ingredients:

1 packet Good Seasonings Italian Dressing
(Ingredients needed to make dressing; Olive oil, water, vinegar * you can use apple cider, white, or my favorite balsamic)
1/4 tsp oregano
½ tsp.  salt
¼ tsp black pepper
½ tsp. sugar
1 garlic clove crushed into paste ( you can use 1/4 tsp of garlic powder, or Tastefully simples garlic garlic or the already minced garlic from the grocery store, add more then 1/4 tsp if you like more garlic like me :)
½ tbsp mayonnaise
 
¼ cup olive oil
2 tbs apple cider vinegar
1 ½ tbsp water
 
4 tbsp Parmesan cheese ( grated )
 
 
Directions:
 
Whisk all of these in a bowl, or use a immersion blender. Refridgerate for an hour or so, so that the flavors come together. & enjoy!

Fresh Tomato, Basil and Mozzarella!

Want something that is super easy, looks pretty & will be loved by many at any gathering? Then this is for you!!

1 lg Tomato, cored & sliced into circles
1 handful of fresh Basil leaves ( I grow my own in the garden, that way I have it on hand all summer long. You can also buy fresh basil at your local grocery)
PKG Fresh Mozzarella ( I used the kind that comes in a bag, but it can also come in a container or can be purchased at the deli counter at most grocery stores)

Clean the basil & pat try with paper towel.
Slice fresh Mozzarella, or you can buy it already sliced.

Place Tomato, basil & mozzarella on a platter. You can also stack them together a piece of each in a row. I just stuck mine on a plate. I Like to put a little drizzle of balsamic vinegar on my salad but really this dish it great all on it's own. Enjoy

Tastes Like My Moms ColeSlaw!



1 small head cabbage, shredded or diced

3 medium carrots, shredded or diced

1 cup mayonnaise

1/3 cup sugar

1/4 cup cider vinegar

1/4 tsp ground black pepper

1/4 tsp celry seed


1.In a large bowl, combine cabbage and carrots. In a small bowl, combine the mayonnaise, sugar,vinegar, pepper & celry seed. Pour over cabbage mixture and toss to coat.put in fridge and let sit for at least 2 hours.

( I took a recipie & added a few things to change it up. Well apparently I hit it out of the park. My step dad loved it & said it tasted like what his mom ust to make.)

Tomato Cucumber Onion Salad!




One of the best Summer salads around & super easy to make.

2 lg Tomato's (cored & sliced into chunks)
1/4 cup chopped red onion
1 cucumber ( skin off & sliced into moons)
Fresh Mozzarella ( I like to add a large amount but you add it to your liking)
6-7 leaves of Fresh Basil ( Chopped)
4 TBS Olive Oil
3 TBS Vinegar (white distilled, Balsamic, Red wine or apple cider vinegar works with this)
Salt & Pepper to taste
Mix all ingredients together & let sit for 1-2 hours in fridge. This helps the flavors to incorporate.

Asian Slaw!




Ingredients
1 (3 ounce) package Chicken (can use beef flavor) flavor ramen noodles with seasoning packet 1 (3 ounce)
(3 ounce) package sliced almonds (toasted)
1 bunch green onions (chopped)
1/2 cup rice wine vinegar
1/2 cup sesame oil
1/2 cup white sugar 1
(16 ounce) package coleslaw mix

Directions
Crush the ramen noodles in a bowl, and stir in the chicken or beef seasoning packet, almonds, green onions, oil and vinegar dressing, and sugar, mixing until the sugar is dissolved.
Place the coleslaw mix into a large salad bowl, pour the dressing mixture over, and toss lightly to combine well. Refrigerate at least 1 hour before serving.

#26 Cranberry Pecan Spring mix Salad!



1 bag of Spring Mix
1/2 cup chopped toasted pecans
1/2 cup dried cranberries

DRESSING:
1/4 cup balsamic vinegar
4 tbs olive oil
1 tbs brown mustard
2 tbs sugar
pinch of salt and pepper

Combine spring mix, pecans and cranberries.
Then in bowel combine vinegar, mustard, sugar, salt and pepper. Then whisk in olive oil until emulsified. Add the dressing in Tablespoons and stop when the desired amount is achieved. Don't pour all the dressing on at once as it might be too much.
