Cinnamon Swirl Banana Bread!




Cinnamon Swirl Banana Bread

  • 3 over-ripe bananas, smashed up
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 tsp vanilla ( i used my homemade vanilla extract )
  • 1 tsp baking soda
  • dash of salt
  • 1 1/2 cups flour
For the swirl:
  • 1/3 cup sugar
  • 1 Tbs cinnamon
  1. Preheat oven to 350. Make sure to grease your loaf pan ( I used Pam) 
  2. Mix bananas, butter, sugar, egg, and vanilla together. sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour. Be careful not to over-mix!
  3. In a small dish, mix together the 1/3 cup sugar and 1 Tbs cinnamon.
  4. Add 1/2 of the batter to the loaf pan and then sprinkle half, or a little more than half of the cinnamon-sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon-sugar on top.
  5. Bake for 50-60 minutes or until tooth pick inserted in center comes out clean.

Monkey Bread!

OK so I have had this recipe for awhile, but didn't make it. During Hurricane Irene it just so happened to be my moms birthday. I had planned a brunch & things went according to plan till 9 am & then no power. Thank Goodness I had already made this & had it sitting when that happened. I had to finish the rest of my stuff on the grill, and this bread was able to hold everyone over. It was amazing & everyone couldn't stop eating it.


Ingredients
  • 2 pkg of  refrigerated biscuit dough
  • 1 cup white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 9 or 10 inch tube/Bundt® pan.
  2. Mix white sugar and cinnamon in a plastic bag. Cut biscuits into quarters. Shake 6 to 8 biscuit pieces in the sugar cinnamon mix. Arrange pieces in the bottom of the prepared pan. Continue until all biscuits are coated and placed in pan. If using nuts and raisins, arrange them in and among the biscuit pieces as you go along.
  3. Melt butter and add brown sugar, mix then pour over biscuits                    .
  4. Bake at 350 degrees F  for 35 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Do not cut! The bread just pulls apart
*I made mine half plain & half with pecans & raisins*

Bread Machine Cinnamon Buns! AKA Clone of A Cinnabon!

AMAZING! I made these for my step dad on Fathers day & boy was he pleased. These turned out so good. I got the recipe from allrecipes.com & it's the clone of a cinnabon, which I never had before. These weren't that hard to make since much of the work is the actual dough making. But you use a bread machine to do that part & it's easy. So if you own a bread machine MAKE THESE, seriously heaven on a plate.

*OMG SOOOO GOOD*

1 cup warm milk (110 degrees F/45 degrees C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

1 (3 ounce) package cream cheese, softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt




Directions
1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
3. Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
4. Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.

BlueBerry Muffins!


These from Scratch blueberry muffins are sure to please, so light & fluffy  they melt in your mouth. & with a taste test with the kiddos these will vanish from site, they just loved them.

1/2 cup unsalted butter
  • 1 1/4 cups white sugar

  • 1/2 teaspoon salt

  • 2 eggs

  • 2 cups all-purpose flour, divided

  • 2 teaspoons baking powder

  • 1/2 cup milk ( you8 can also use buttermilk, but I never have that on hand)

  • 1 1/4 cup fresh blueberries - rinsed, drained and patted dry ( I used frozen blueberries, because that is all I had, I put them in frozen, no need to defrost)

  • 2 tablespoons white sugar

  • Directions

    1. Position rack in the middle of oven. Preheat oven to 375 degrees F (190 degrees C). Spray the top of a muffin pan with non-stick coating, and line with paper liners.
    2. In a large bowl, cream together the butter, 1 1/4 cups sugar and salt until light and fluffy. Beat in the eggs one at a time. Mix together 1 3/4 cup of the flour and baking powder. Beat in the flour mixture alternately with the milk, mixing just until incorporated.  Mix the blueberries with the remaining 1/4 cup of the flour, and fold into the batter. Scoop into muffin cups. Sprinkle tops lightly with sugar.
    3. Bake in preheated oven for 30 minutes, or until golden brown, and tops spring back when lightly tapped.               
    4. *This made about 18 regular size muffins*

    Bacon Pie!!






    12 slices bacon, crisply cooked, crumbled
    1 cup shredded Swiss cheese (4 oz)
    1/3 cup chopped onion
    3/4 cup Original Bisquick® mix
    1 1/2 cups milk
    3 eggs
    1/8 teaspoon pepper



    1.Heat oven to 400°F. Grease 9-inch glass pie plate. Sprinkle bacon, cheese and onion into pie plate.
    2.In medium bowl, beat remaining ingredients until blended; pour into pie plate.
    3.Bake 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

    ( For easy cooking of bacon, cover cookie sheet with foil. Place bacon on. Put broiler on low & cook bacon until done. This was so easy, i think 6-8 minutes. turning half way through. & easy clean up with just tossing the foil.)

    Chocolate Chip Mini Muffins!!





    Ingredients
    1/2 cup sugar
    1/4 cup shortening
    1 egg
    1/2 cup milk
    1/2 teaspoon vanilla extract
    1 cup all-purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/4 teaspoon salt
    2/3 cup miniature semisweet chocolate chips
    Directions
    1.In a large mixing bowl, cream sugar and shortening until fluffy. Add egg, milk and vanilla; mix well. Combine dry ingredients. Gradually add to creamed mixture; mix well. Fold in chocolate chips. Spoon about 1 tablespoon of batter into each greased or paper-lined mini-muffin cup. Bake at 375 degrees F for 10-13 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.
    Makes 2 1/2 dozen Mini's

    Baked French Toast Casserole!

    6 to 8 servings. Ingredients
    •1 loaf French bread (13 to 16 ounces)
    •8 large eggs
    •2 cups half-and-half
    •1 cup milk
    •2 tablespoons granulated sugar
    •1 teaspoon vanilla extract
    •1/4 teaspoon ground cinnamon
    •1/4 teaspoon ground nutmeg
    •Dash salt
    •Praline Topping, recipe follows
    •Maple syrup
    Directions
    Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

    The next day, preheat oven to 350 degrees F.

    Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.


    Praline Topping:
    •1/2 pound (2 sticks) butter
    •1 cup packed light brown sugar
    •1 cup chopped pecans
    •2 tablespoons light corn syrup
    •1/2 teaspoon ground cinnamon
    •1/2 teaspoon ground nutmeg
    Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

    Ham & Egg Puff Casserole!


    Part One:
    ingredients
    2 cups cooked chopped Ham
    8 oz shredded Cheddar cheese
    16 slices of white bread crust removed
    9x13 Pyrex dish (sprayed with cooking spray)
    Butter
    Place buttered slices of bread butter side down in a 9x13 dish
    spread ham & cheese on top of bread
    top with remaining bread butter side down

    part 2:
    Blend
    6 eggs
    3 cups of milk
    1/4 tsp pepper
    Pour over bread

    Top with tomato's or buttered cornflakes.
    Bake 1 hour at 350* or until done.

    # 18 Cheesy Ham and Hash Brown Casserole!



    Ingredients:
    1 (32 ounce) package frozen hash brown
    potatoes
    8 ounces cooked, diced ham ( I used 16 oz's of ham steak for bulk)
    2 (10.75 ounce) cans condensed cream of potato soup
    1 (16 ounce) container sour cream
    2 cups shredded sharp Cheddar cheese
    1 1/2 cups grated Parmesan cheese (I only used 1 cup & it was plenty)

    Directions:
    1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
    2. In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
    3. Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

    Sausage Breakfast Casserole!!







    EASTER BREAKFAST CASSEROLE
    Ingredients
    Prep: 30 min. Bake: 45 min.
    1 package (12 oz.) Johnsonville® Breakfast Sausage Links
    6 English muffins, cut into 1-in. cubes
    1/4 cup butter, melted
    1 cup (4 oz.) shredded cheddar cheese
    1 cup (4 oz.) shredded mozzarella cheese
    1/2 cup chopped onion
    1/2 cup chopped red pepper
    12 eggs
    2 cups milk
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 cup bacon bits
    Directions

    Cook sausage according to package directions. Cool slightly; cut into 1/4-in. slices. Place English muffin cubes in a greased 13in. x 9in. baking dish; drizzle with butter. Layer with sausage, cheese, onion and red pepper. In a large bowl, combine the eggs, milk, salt and pepper. Pour over cheese. Sprinkle with bacon. Cover and refrigerate overnight.Remove from the refrigerator 30 minutes before baking. Uncover and bake at 350˚F for 45-50 minutes or until a knife inserted into the center comes out clean. Let stand 5 minutes.

    Yield: 12 servings.
    (I made this for dinner & served it with a platter of fresh fruit. It was amazing!! Everyone loved it, *this shocked me* Everyone got up for 2nds, so I know this recipe is a keeper. I didn't put in fridge over night I just put it in for 6 hours. I made it in the AM & then cooked it for dinner. I didn't use Johnsonville sausage links, I used what was on sale. Either way it was a big hit, this would be an awesome dish for a brunch & it was super easy to make. I also didn't put bacon bits on the top. Enjoy!)
